FINGERLING POTATOES WITH GREEN BEANS AND SAGE

INGREDIENTS:

- 8 SMALL FINGERLING POTATOES, WASHED AND CUT (I LIKE USING A MIX OF PURPLE AND RED)

- 1/2 POUND OF GREEN BEANS, TRIMMED

- 1/4 CUP CURLY ENDIVE, CHOPPED

- 1 LARGE CLOVE OF GARLIC, MINCED

- 1 TABLESPOON GHEE OR SHALLOT OIL

- 4 SPRINGS OF SAGE, WASHED AND CHOPPED

- SALT AND PEPPER

 

DIRECTIONS:

1. IN A LARGE CAST IRON SKILLET HEAT GHEE OR OIL.

2. ADD POTATOES WITH 1/2 CUP WATER AND COVER. STEAM FOR 10 MINUTES.

3. ADD GREEN BEANS AND COOK FOR ANOTHER 10 MINUTES.

4. STIR IN GARLIC, SAGE, AND ENDIVE.  LET COOK FOR ANOTHER COUPLES MINUTES.

5. REMOVE FROM HEAT AND SERVE. 

NOTE: CURLY ENDIVE IS BITTER.  A LITTLE GOES A LONG WAY.
