INGREDIENTS:
- 5 EGGS, HARD BOILED
- 1/2 AVOCADO, DICED (OR USE A WHOLE AVOCADO TO MAKE IT EXTRA CREAMY)
- 1 TBSP OLIVE OIL
- 1 STALK CELERY, HALVED AND CHOPPED
- 1 TSP MUSTARD
- 1/2 FRENCH BAGUETTE, OR WHOLE GRAIN SLCIED BREAD
- FRESH CHIVES FOR GARNISH OR TRY FREEZE DRIED
- SPRINKLE OF SEA SALT
* SOMETIMES I ADD A CLOVE OF GARLIC, MINCED TO GIVE THIS AN EXTRA SPICY BOLDNESS
DIRECTIONS:
1. PEEL EGGS, PLACE IN A LARGE BOWL. LET COOL.
2. IN A MEDIUM BOWL COMBINE AVOCADO, OLIVE OIL, AND MUSTARD, MIX UNTIL MOST CHUNKS ARE GONE
3. ADD CELERY AND PEELED EGGS, MIX WITH FORK, REFRIGERATE.
4. TOAST BREAD, AND ARRANGE ON PLATTER.
5. DIVIDE EGG SALAD AMONST TOASTED BREAD AND GARNISH WITH CHIVES. LIGHTLY DRIZZLE WITH OLIVE OIL AND SPRINKLE WITH SEA SALT
