MISO SOUP WITH SAVOY CABBAGE AND LEEKS

INGREDIENTS:
- 1 HEAD SAVOY CABBAGE, QUARTERED AND SLICED
- 1 MEDIUM HEAD OF BROCCOLI, CUT INTO FLORETS
- 1 LEEK, SLICED
- 2 QUARTS LOW SODIUM VEGETABLE STOCK
- 3 TABLESPOONS WHITE MISO
- 1 TBSP TOASTED SESAME OIL
- 1 8OZ CONTAINER SILKEN TOFU
- MICRO GREEN TO GARNISH
DIRECTIONS:
1. IN A LARGE CAST IRON SKILLET HEAT SESAME OIL OVER MEDIUM HEAT. ADD LEEKS AND CABBAGE. LET BROWN.
2. IN A LARGE POT, BRING VEGETABLE STOCK TO A BOIL. ADD BROCCOLI. LET COOK FOR 10 MINUTES.
3. ADD CABBAGE, BROCCOLI, AND TOFU TO BOILING STOCK. LET COOK FOR ANOTHER 10 MINUTES.
4. IN A SEPARATE BOWL, MIX MISO PASTE WITH 1/4 CUP HOT WATER. BLEND UNTIL SMOOTH.
5. ADD MISO TO SOUP, STIR UNTIL EVENLY MIXED.
6. SERVE SOUP AND GARNISH WITH MICRO GREENS.
