NAPA CABBAGE CHICKPEA CELERY WRAP

INGREDIENTS:

 

- 1 HEAD NAPA CABBAGE, WASHED

- 3 CUPS COOKED CHICKPEAS

- 2 CARROTS, QUARTERED AND SLICED

- 3 CELERY STALKS, HALVED AND CHOPPED

- 2 TBSP VEGAN MAYO

- 2 STALKS FRESH PARSLEY, CHOPPED

- 1/2 TSP TURMERIC POWDER

- 1 SHALLOT, CHOPPED FOR GARNISH

- SPRINKLE OF CELERY SALT

 

DIRECTIONS:

 

1. IN A LARGE BOWL COMBINE CHICKPEAS, CARROTS, CELERY, MAYO, PARSLEY, AND TURMERIC.  MIX WELL.

2.  SEPARATE CABBAGE LEAVES AND LAY ON SERVING PLATTER.

3.  SPOON MIXTURE ONTO CABBAGE LEAVES.

4. GARNISH WITH SHALLOT AND CELERY SALT.
