SWEET POTATO AND KALE WONTONS

INGREDIENTS:
- 1 12 OZ PACKAGE OF WONTONS (I USED ABOUT HALF THE WONTONS)
- 1 LARGE SWEET POTATO, DICED
- 1/2 BUNCH OF KALE, WASHED AND CHOPPED
- 4 SPRINGS TARRAGON, REMOVE LEAVES AND CHOP
- 1 TBSP GHEE OR AVOCADO OIL
- 1 TBSP 100% PURE MAPLE SYRUP
- SALT AND MICRO GREENS TO GARNISH
DIRECTIONS:
1. PREHEAT OVEN TO 425 DEGREES F
2. PLACE SWEET POTATOES ON A BAKING SHEET WITH GHEE OR AVOCADO OIL, BAKE FOR 10 MINUTES.
3. REMOVE POTATOES FROM OVEN, ADD KALE AND TARRAGON. BAKE FOR 10 MORE MINUTES.
4. REMOVE FROM OVEN AND LET COOL.
5. TAKE A WONTON WRAPPER, SCOOP OUT ABOUT A TSP OF THE SWEET POTATO/ KALE MIXTURE INTO THE CENTER OF THE WONTON. PULL UP OPPOSITE ENDS OF THE WRAPPER AND PINCH WITH WATER. REPEAT UNTIL WONTON IS FULLY SEALED AND REMEMBER IT'S OKAY IF THEY DON'T LOOK PERFECT!
6. PLACE WONTONS ON GREASED BAKING SHEET AND BAKE FOR ANOTHER 10 MINUTES UNTIL GOLDEN BROWN.
7. I SERVED MY WONTONS ON A BED OF MICRO GREENS TOPPED WITH A LITTLE MAPLE SYRUP AND SEA SALT.
