INGREDIENTS:
- 1 AVOCADO, DICED
- 1 CUCUMBER, PEELED, QUARTERED AND SLICED
- 2 YELLOW BEETS (RED BEETS WILL WORK GREAT, I JUST LIKE THE COLOR OF THE YELLOW), CUBED
- 2 SCALLIONS, SLICED
- 1 WATERMELON RADISH, THINLY SLICED
- JUICE FROM 2 LIMES
- 1/4 CUP CHOPPED CILANTRO
-1 TSBP AVOCADO OIL
DIRECTIONS:
1. ROAST BEETS FOR 20 MINUTES IN A 375 DEGREE F OVEN
2. WHILE BEETS ARE ROASTING COMBINE AVOCADO, CUCUMBER, SCALLIONS, WATERMELON RADISH IN A LARGE BOWL
3. ADD ROASTED BEETS.
4. DRIZZLE WITH AVOCADO OIL AND LIME JUICE
5. SERVE
